Chocolate mousse

The healing power of chocolate should never be underestimated"

250g Dark chocolate 65% cacao
3 Eggs
100g caster sugar
500g Whipping cream

Firstly cut into small pieces and melt the chocolate in a bain marie.


Meanwhile, pour the cream really cold in a bowl and whip it firmly. Whisk until it become smooth, be careful not to whip it too much, as it could become grainy. Then, keep in fridge


In a bowl whisk eggs and sugar together for 1 minute. Add the melted chocolate to it and mix well.




Take the whipped cream from the fridge and gently fold it into the eggs and chocolate. Incorporate it little by little using a spatula. Keep in fridge for 1 hour.
